Squash Waffles

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3 eggs
  • 1 1/2 cups milk
  • 1/2 cup mashed cooked acorn squash
  • 2 tablespoons melted butter

Recipe

  • 1 in a bowl, combine the flour, sugar, baking powder, salt and cinnamon.
  • 2 in another bowl, combine the eggs, milk, squash and butter.
  • 3 stir into the dry ingredients just until combined.
  • 4 bake in a preheated waffle iron until golden brown.
  • 5 serve with maple syrup over top.
