Puffy Apple Pancake Bake

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 cup full-fat milk or 1 cup half-and-half cream
  • 4 large eggs
  • 3 -4 tablespoons sugar
  • 1 1/2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2/3 cup flour
  • 1/4 cup butter (cut into pieces)
  • 2 large apples, peeled, cored and thinly sliced or 2 large use 3 smaller apples
  • 1/4-1/3 cup brown sugar, packed
  • confectioners' sugar (optional)

Recipe

  • 1 set oven to 425 degrees (preheat oven for 10 minutes).
  • 2 in a bowl whisk together milk, eggs, sugar and cinnamon until well blended.
  • 3 add in flour and whisk until the batter is very smooth.
  • 4 place the butter pieces in a 13 x 9-inch glass baking dish and place the dish in the oven for 5 minutes.
  • 5 remove the hot dish from oven and place the apple slices in rows overlapping on top of the melted butter.
  • 6 return the dish to the oven and bake apples for about 10 minutes, or until the apple slices are slightly softened, and beginning to brown around the edges.
  • 7 remove from the oven and pour the batter evenly over the hot apples; sprinkle with brown sugar.
  • 8 return to the oven an bake for about 20 minutes, or until browned and puffed.
  • 9 sprinkle with confestioners sugar if desired.
  • 10 serve warm.
