Plum Cake

Ingredients
- Servings: 12
- 2 1/3 cups self-rising flour
- 2 cups sugar
- 1 cup cooking oil
- 3 eggs
- 1/2 teaspoon cinnamon
- 1/2 teaspoon clove
- 1 cup pecans, chopped
- 2 (128 ml) jars strained plum baby food
- 1 cup icing sugar
- lemon juice, to thin (about 1 lemon)
Recipe
- 1 pour all ingredients in a bowl; mix well with a spoon. pour into a well-greased tube or bundt pan.
- 2 bake in a 350f oven for about an hour. test to see if done. a few minutes more may be required. cool in the pan for about 10 minutes.
- 3 run a knife around the edge and then leave in the pan for awhile longer. turn out onto a plate.
- 4 icing: combine icing sugar and lemon juice; pour over cake.
