Plum Cake

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 2 1/3 cups self-rising flour
  • 2 cups sugar
  • 1 cup cooking oil
  • 3 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon clove
  • 1 cup pecans, chopped
  • 2 (128 ml) jars strained plum baby food
  • 1 cup icing sugar
  • lemon juice, to thin (about 1 lemon)

Recipe

  • 1 pour all ingredients in a bowl; mix well with a spoon. pour into a well-greased tube or bundt pan.
  • 2 bake in a 350f oven for about an hour. test to see if done. a few minutes more may be required. cool in the pan for about 10 minutes.
  • 3 run a knife around the edge and then leave in the pan for awhile longer. turn out onto a plate.
  • 4 icing: combine icing sugar and lemon juice; pour over cake.
