New York Style Cheesecake

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 12
  • 3 1/2 cups graham cracker crumbs
  • 1 tablespoon cinnamon
  • 1/4 cup melted butter
  • 5 (250 g) packages cream cheese, at room temperature
  • 2 cups sugar
  • 1 1/2 cups heavy cream
  • 2 tablespoons lemon juice
  • 1 tablespoon vanilla
  • 4 eggs, at room temperature
  • 1 1/2 cups sour cream

Recipe

  • 1 crust: combine crust ingredients.
  • 2 press into bottom and sides of 10-inch springform pan.
  • 3 chill.
  • 4 preheat oven to 325 f.
  • 5 filling: beat cream cheese and sugar until smooth.
  • 6 add cream, lemon juice and vanilla; beat until well blended.
  • 7 add the eggs, one at a time, beating well after each addition.
  • 8 stir in sour cream.
  • 9 pour mixture into prepared shell and bake in oven until center is just set, about 90 minutes.
  • 10 turn off oven and prop door open slightly.
  • 11 after about 30 minutes, transfer to a rack to cool.
  • 12 chill overnight.
  • 13 serve with fresh fruit or a fruit sauce.
  • 14 12-14 servings.
  • 15 dining in.
