New York Style Cheesecake

Ingredients

- 3 1/2 cups graham cracker crumbs
- 1 tablespoon cinnamon
- 1/4 cup melted butter
- 5 (250 g) packages cream cheese, at room temperature
- 2 cups sugar
- 1 1/2 cups heavy cream
- 2 tablespoons lemon juice
- 1 tablespoon vanilla
- 4 eggs, at room temperature
- 1 1/2 cups sour cream
Recipe
- 1 crust: combine crust ingredients.
- 2 press into bottom and sides of 10-inch springform pan.
- 3 chill.
- 4 preheat oven to 325 f.
- 5 filling: beat cream cheese and sugar until smooth.
- 6 add cream, lemon juice and vanilla; beat until well blended.
- 7 add the eggs, one at a time, beating well after each addition.
- 8 stir in sour cream.
- 9 pour mixture into prepared shell and bake in oven until center is just set, about 90 minutes.
- 10 turn off oven and prop door open slightly.
- 11 after about 30 minutes, transfer to a rack to cool.
- 12 chill overnight.
- 13 serve with fresh fruit or a fruit sauce.
- 14 12-14 servings.
