Orange You Glad I Didn't Say Banana Mayonnaise Cake

Ingredients

  • 1 cup mayonnaise
  • 1 cup splenda sugar blend for baking or 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup banana (overripe and mashed)
  • 1/2 cup water
  • 2 cups flour, sifted
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 8 ounces mascarpone cheese
  • 8 ounces prepared whipped cream (cool whip works well or 8 ounces non-dairy whipped topping, cool whip works well)
  • 1/4 cup butter, softened
  • 2 teaspoons vanilla extract
  • 1/2-1 cup confectioners' sugar, to taste
  • 2 bananas, cut into 1/4 inch slices
  • 1/4 cup graham cracker, crumbled
