Ingredients

- 1 cup splenda sugar blend for baking or 1 cup sugar

- 1 cup banana (overripe and mashed)

- 2 cups flour, sifted

- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 8 ounces mascarpone cheese
- 8 ounces prepared whipped cream (cool whip works well or 8 ounces non-dairy whipped topping, cool whip works well)
- 1/4 cup butter, softened
- 2 teaspoons vanilla extract
- 1/2-1 cup confectioners' sugar, to taste
- 2 bananas, cut into 1/4 inch slices
- 1/4 cup graham cracker, crumbled
