Pink Peppermint Frosting

Ingredients
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon lemon extract
- 1/4 teaspoon peppermint extract
- 1 pinch salt
- 1 lb powdered sugar
- 1/3 cup butter
- red food coloring
- 1/2 cup crushed peppermint candy
Recipe
- 1 combine egg whites, cream of tartar, lemon and peppermint extracts and salt.
- 2 beat at high speed on a mixer until stiff.
- 3 gradually add sugar 1 cup at a time.
- 4 beat until smooth, scraping bowl often.
- 5 add butter and a few drops of food coloring, beating until well blended.
- 6 stir in peppermint candy.
- 7 makes enough for 2 9 inch round cakes.
