Pink Peppermint Frosting

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon lemon extract
  • 1/4 teaspoon peppermint extract
  • 1 pinch salt
  • 1 lb powdered sugar
  • 1/3 cup butter
  • red food coloring
  • 1/2 cup crushed peppermint candy

Recipe

  • 1 combine egg whites, cream of tartar, lemon and peppermint extracts and salt.
  • 2 beat at high speed on a mixer until stiff.
  • 3 gradually add sugar 1 cup at a time.
  • 4 beat until smooth, scraping bowl often.
  • 5 add butter and a few drops of food coloring, beating until well blended.
  • 6 stir in peppermint candy.
  • 7 makes enough for 2 9 inch round cakes.
