Oven Baked German Apple Pecan Pancake

Total Time: 34 mins Preparation Time: 20 mins Cook Time: 14 mins

Ingredients

  • Servings: 4
  • 3/4 cup buttermilk pancake mix
  • 1/2 cup water
  • 1/3 cup sugar
  • 3 eggs
  • 3 cups tart apples, pared &,sliced thin
  • 1/4 cup butter
  • 1/4 cup chopped pecans
  • 1 teaspoon cinnamon

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 combine pancake mix, water, eggs and 1 tsp sugar and mix well.
  • 3 saute apples in melted butter in 9 or 10" ovenproof skillet over medium high heat until tender.
  • 4 remove skillet from heat and sprinkle apples with pecans.
  • 5 pour batter over skillet mixture.
  • 6 combine remaining sugar and cinnamon and sprinkle over batter.
  • 7 cover skillet with lid or foil and bake for 12 to 14 minutes or until pancake is puffed and sugar is melted.
  • 8 loosen sides of pancake from skillet and cool slightly.
  • 9 cut into wedges and serve with maple syrup and bacon or sausage if desired.
