Oven Baked German Apple Pecan Pancake

Ingredients

- 3/4 cup buttermilk pancake mix
- 1/2 cup water
- 1/3 cup sugar
- 3 eggs
- 3 cups tart apples, pared &,sliced thin
- 1/4 cup butter
- 1/4 cup chopped pecans
- 1 teaspoon cinnamon
Recipe
- 1 preheat oven to 450 degrees.
- 2 combine pancake mix, water, eggs and 1 tsp sugar and mix well.
- 3 saute apples in melted butter in 9 or 10" ovenproof skillet over medium high heat until tender.
- 4 remove skillet from heat and sprinkle apples with pecans.
- 5 pour batter over skillet mixture.
- 6 combine remaining sugar and cinnamon and sprinkle over batter.
- 7 cover skillet with lid or foil and bake for 12 to 14 minutes or until pancake is puffed and sugar is melted.
- 8 loosen sides of pancake from skillet and cool slightly.
- 9 cut into wedges and serve with maple syrup and bacon or sausage if desired.
