Plum & Coconut Cake

Ingredients

- 10 -15 plums, stones removed and halved or chopped if using large plums
- 125 g melted butter
- 1 cup sugar
- 1 teaspoon vanilla essence
- 3 eggs, a room temperature
- 1 1/2 cups self-raising flour
- 125 ml milk
- 1 1/2 cups desiccated coconut
Recipe
- 1 preheat oven to 180o celsius
- 2 grease and line the base of a 24cm springform cake pan with non-stick paper.
- 3 combine flour, sugar and coconut in a mixing bowl. stir in the melted butter, eggs, milk and vanilla and mix well.
- 4 spread half the mixture in cake pan. scatter plums over mixture. spread remaining mixture over plums.
- 5 if have extra plums cut into segments and arrange over the top of the cake.
- 6 bake for 1 hour or until cooked when tested with a skewer.cover with foil if it is overbrowning and still not cooked.
- 7 stand for 10 minutes in a pan before releasing the springform. serve sliced, warm or at room temperature.
- 8 delcious with custard or cream.
