Plum & Coconut Cake

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 10 -15 plums, stones removed and halved or chopped if using large plums
  • 125 g melted butter
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 3 eggs, a room temperature
  • 1 1/2 cups self-raising flour
  • 125 ml milk
  • 1 1/2 cups desiccated coconut

Recipe

  • 1 preheat oven to 180o celsius
  • 2 grease and line the base of a 24cm springform cake pan with non-stick paper.
  • 3 combine flour, sugar and coconut in a mixing bowl. stir in the melted butter, eggs, milk and vanilla and mix well.
  • 4 spread half the mixture in cake pan. scatter plums over mixture. spread remaining mixture over plums.
  • 5 if have extra plums cut into segments and arrange over the top of the cake.
  • 6 bake for 1 hour or until cooked when tested with a skewer.cover with foil if it is overbrowning and still not cooked.
  • 7 stand for 10 minutes in a pan before releasing the springform. serve sliced, warm or at room temperature.
  • 8 delcious with custard or cream.
