Skinny Cheesecake

Ingredients

  • Servings: 6
  • 4 red grapefruits
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 (8 ounce) package neufchatel cheese, softened
  • 1/3 cup sugar

Recipe

  • 1 juice 3 grapefruit to make 1 3/4 cups juice.
  • 2 set aside.
  • 3 with spoon, scrape membrane out of shells; reserve shells.
  • 4 peel and remove sections from remaining grapefruit.
  • 5 reserve from garnish.
  • 6 in small saucepan, soften gelatin in cold water; then dissolve over low heat.
  • 7 set aside.
  • 8 mix cheese, sugar and grapefruit juice until smooth.
  • 9 on low, add dissolved gelatin and mix well.
  • 10 pour mixture into reserved grapefruit shells.
  • 11 chill until firm.
  • 12 before serving, garnish with reserved grapefruit sections.
