Skinny Cheesecake

Ingredients

- 4 red grapefruits
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 (8 ounce) package neufchatel cheese, softened
- 1/3 cup sugar
Recipe
- 1 juice 3 grapefruit to make 1 3/4 cups juice.
- 2 set aside.
- 3 with spoon, scrape membrane out of shells; reserve shells.
- 4 peel and remove sections from remaining grapefruit.
- 5 reserve from garnish.
- 6 in small saucepan, soften gelatin in cold water; then dissolve over low heat.
- 7 set aside.
- 8 mix cheese, sugar and grapefruit juice until smooth.
- 9 on low, add dissolved gelatin and mix well.
- 10 pour mixture into reserved grapefruit shells.
- 11 chill until firm.
- 12 before serving, garnish with reserved grapefruit sections.
