Peach And Oat Muffins

Ingredients
- 1 1/2 cups milk
- 1 1/4 cups quick-cooking oats
- 1 1/2 cups self raising flour
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup packed brown sugar
- 1/4 cup butter, melted
- 2 teaspoons vanilla
- 1/2 teaspoon orange zest
- 1 1/2 cups canned peaches, drained and sliced
Recipe
- 1 preheat oven to 400°f (200°c). lightly butter or spray non-stick muffin pans or line with paper baking cups.
- 2 combine milk and oats in a bowl. leave for 5 minute
- 3 in large bowl, combine flour, salt and nutmeg.
- 4 whisk egg, brown sugar, butter, vanilla and lemon rind into oat mixture. pour over dry ingredients and sprinkle with peaches. stir just until moistened.
- 5 spoon into prepared muffin pan. bake for about 30 min or until tops are golden brown and firm to the touch.
