Peach And Oat Muffins

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups milk
  • 1 1/4 cups quick-cooking oats
  • 1 1/2 cups self raising flour
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
  • 2 teaspoons vanilla
  • 1/2 teaspoon orange zest
  • 1 1/2 cups canned peaches, drained and sliced

Recipe

  • 1 preheat oven to 400°f (200°c). lightly butter or spray non-stick muffin pans or line with paper baking cups.
  • 2 combine milk and oats in a bowl. leave for 5 minute
  • 3 in large bowl, combine flour, salt and nutmeg.
  • 4 whisk egg, brown sugar, butter, vanilla and lemon rind into oat mixture. pour over dry ingredients and sprinkle with peaches. stir just until moistened.
  • 5 spoon into prepared muffin pan. bake for about 30 min or until tops are golden brown and firm to the touch.
