Ingredients
- 300 g fresh carrots (peeled and finely grated)
- 200 g pure ground almonds
- 200 g sugar
- 2 eggs (lightly beaten)
- 2 teaspoons baking powder
Recipe
- 1 pre heat oven to 180 degees celsius grease a 20 cm springform cake tin.
- 2 put the grated carrots in a bowl and using a wooden spoon, mix in the sugar until conbined.
- 3 mix in the almond powder and the baking powder and mix until combined.
- 4 add the eggs and mix in until combined.
- 5 pour into well greased cake tin and bake for about 40 - 50 minutes or until the centre is firm to the touch.
- 6 cool completel before taking out of the cake tin. dust with icing sugar and serve.
