Queen Of Carrot Cakes ( Wheat And Milk Free)

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 300 g fresh carrots (peeled and finely grated)
  • 200 g pure ground almonds
  • 200 g sugar
  • 2 eggs (lightly beaten)
  • 2 teaspoons baking powder

Recipe

  • 1 pre heat oven to 180 degees celsius grease a 20 cm springform cake tin.
  • 2 put the grated carrots in a bowl and using a wooden spoon, mix in the sugar until conbined.
  • 3 mix in the almond powder and the baking powder and mix until combined.
  • 4 add the eggs and mix in until combined.
  • 5 pour into well greased cake tin and bake for about 40 - 50 minutes or until the centre is firm to the touch.
  • 6 cool completel before taking out of the cake tin. dust with icing sugar and serve.
