Red Raspberry Cake

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 2 (10 ounce) packages frozen red raspberries, thawed
  • 1 (3 ounce) package raspberry gelatin powder
  • 2 1/4 cups sifted all-purpose flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 3 eggs
  • 1 cup miniature marshmallow
  • whipped cream or vanilla ice cream

Recipe

  • 1 combine raspberries and gelatin,set aside.
  • 2 sift together flour,sugar,baking powder and salt into a bowl.
  • 3 add shortening,milk and eggs.
  • 4 beat at low speed to blend.
  • 5 beat at medium speed 3 minutes until batter is smooth.
  • 6 arrange marshmallows in well greased 13x9x2 inch cake pan.
  • 7 pour batter over marshmallows.
  • 8 spoon raspberry mixture evenly over batter.
  • 9 bake in 350 oven for 50 minutes or until cake tests done.
  • 10 cool in pan.
  • 11 serve with whipped cream or ice cream.
