Rita's Boiled Frosting

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 3/4 cup sugar
  • 1/4 cup water
  • 1/4 cup light corn syrup
  • 3 egg whites (room temperature)
  • 1 teaspoon vanilla

Recipe

  • 1 mix the sugar, corn syrup, and water in a small, heavy saucepan.
  • 2 insert a candy thermometer, partially cover pan and bring to a boil over moderate heat.
  • 3 remove cover and boil without stirring until the thermometer registers 240-242.
  • 4 just before syrup reaches the proper temperature, begin beating egg whites with an electric mixer until soft peaks form.
  • 5 when syrup reaches the correct temperature, set mixer at high speed and pour syrup into whites in a slow thin stream. continue beating until glossy and firm enough to hold a shape.
  • 6 beat in vanilla.
  • 7 makes enough to fill and frost a 9" two layer cake.
