Mini Honey Cheesecakes

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 250 g ricotta cheese
  • 1/3 cup caster sugar
  • 1/3 cup honey
  • 4 eggs
  • 1 teaspoon ground cinnamon
  • 1 lemon, zest of, finely grated

Recipe

  • 1 beat ricotta, sugar and honey in a large mixing bowl until smooth and well-combined.
  • 2 add the eggs one at a time, beating well as each egg is added.
  • 3 blend in the cinnamon and the lemon rind.
  • 4 spoon the mixture into 6 lightly greased friand moulds or into 8 lightly greased recesses in a muffin pan.
  • 5 bake in a moderate oven (180ºc) for 20-25 minutes or until firm.
  • 6 allow to cool and serve with a drizzle of extra honey, a dollop of cream or mascarpone, and berries.
