Mixed Potato Cakes

Ingredients

  • Servings: 8
  • 0.5 (24 ounce) bag frozen mashed potatoes, thawed and coarsely mashed
  • 0.5 (24 ounce) bag frozen mashed sweet potatoes, thawed and coarsely mashed
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried chipotle powder
  • 1/4 teaspoon fresh ground black pepper
  • 1 egg, lightly beaten
  • 1/4 cup flour
  • 2 tablespoons vegetable oil

Recipe

  • 1 preheat oven to 200°f
  • 2 pour flour into a shallow dish and set aside.
  • 3 heat vegetable oil over medium high heat in a large skillet.
  • 4 in a large mixing bowl, combine potatoes, salt, chipotle seasoning, pepper and egg.
  • 5 form the mixture into 8 equal size cakes.
  • 6 working in batches, dredge potato cakes in flour, add to the skillet and saute for 2 – 3 minutes per side or until golden brown.
  • 7 transfer to the oven to keep warm and repeat for remaining potato cakes.
