New Orleans Fruitcake

Ingredients
- 2 cups sugar
- 4 eggs
- 2 lbs pecans
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 lb candied pineapple
- 1 lb candied cherry
- 1 lb candied date
Recipe
- 1 preheat oven to 350°f.
- 2 beat eggs, sugar and vanilla until frothy;
- 3 coat fruits with flour mixture (flour and baking powder).
- 4 add egg mixture.
- 5 line 2 loaf pans with wax paper and dump 1/2 mixture in each pan.
- 6 bake in oven for 1 hour.
