New Orleans Fruitcake

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 2 cups sugar
  • 4 eggs
  • 2 lbs pecans
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 lb candied pineapple
  • 1 lb candied cherry
  • 1 lb candied date

Recipe

  • 1 preheat oven to 350°f.
  • 2 beat eggs, sugar and vanilla until frothy;
  • 3 coat fruits with flour mixture (flour and baking powder).
  • 4 add egg mixture.
  • 5 line 2 loaf pans with wax paper and dump 1/2 mixture in each pan.
  • 6 bake in oven for 1 hour.
