Ricotta Red Grape Teacake

Ingredients

- 1/2 cup caster sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 3/4 cup ricotta cheese
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice
- 1 cup red seedless grapes
- 1/2 cup honey
- cream, to serve
Recipe
- 1 pre heat oven to 180 c.
- 2 grease and line a round 20 cms cake tin.
- 3 using electric beater, beat sugar, eggs and vanilla till pale and fluffy.
- 4 beat in ricotta till just combined.
- 5 sift in flour, baking powder and mixed spice.
- 6 fold dry ingredients through ricotta mixture.
- 7 fold through grapes.
- 8 spoon into prepared pan.
- 9 bake 25 - 30 minutes.
- 10 pierce top of cake with skewer.
- 11 place honey in jug, microwave on high for 60 seconds.
- 12 pout warm honey over cake and leave for 10 minutes.
- 13 serve warm cake with cream.
