Ricotta Red Grape Teacake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 3/4 cup ricotta cheese
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon mixed spice
  • 1 cup red seedless grapes
  • 1/2 cup honey
  • cream, to serve

Recipe

  • 1 pre heat oven to 180 c.
  • 2 grease and line a round 20 cms cake tin.
  • 3 using electric beater, beat sugar, eggs and vanilla till pale and fluffy.
  • 4 beat in ricotta till just combined.
  • 5 sift in flour, baking powder and mixed spice.
  • 6 fold dry ingredients through ricotta mixture.
  • 7 fold through grapes.
  • 8 spoon into prepared pan.
  • 9 bake 25 - 30 minutes.
  • 10 pierce top of cake with skewer.
  • 11 place honey in jug, microwave on high for 60 seconds.
  • 12 pout warm honey over cake and leave for 10 minutes.
  • 13 serve warm cake with cream.
