- 1 1/2 cups scottish oatmeal, such as bob's red mill scottish oatmeal
- 1/2 cup whole wheat flour
- 3/4 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup butter or 1/4 cup margarine, melted
- 1/2 cup hot water

- 1 preheat oven to 325 degrees f. grease a baking sheet.
- 2 place all but two tablespoons of the scottish oatmeal in a bowl with flour, sugar, salt and baking powder. stir until combined.
- 3 add butter and stir until evenly distributed. with a fork, mix in water, just until moistened. pat dough into a ball, and then flatten slightly. sprinkle reserved 2 tablespoons oats on a board. roll dough out 1/4 inch thick. with a 2 to 3 inch round cutter, cut dough into rounds. re-roll and cut scraps. place oatcakes about 1/4 inch apart on prepared baking sheet.
- 4 bake at 325°f until scottish oatcakes are golden, approximately 25 minutes. let cool on a rack. enjoy plain, or serve with jam or cheese.

- 150 g butter
- 150 g sugar

- 1 preheat oven to 380 degrees fahrenheit.
- 2 combine flour, butter, sugar and eggs in a bowl.
- 3 mix for a few minutes with handmixer.
- 4 add raisins.
- 5 either poor batter into one large baking dish or smaller shapes (this influences baking time).
- 6 peel apples. use peeler or cheese slicer to shave off small slices of apple.
- 7 press apple slices into batter vertically, working from the outside inches if you are using round cake pans, you will get a sort of rose-shape. it's ok if the apple slices stick out a bit. the edges will curl around and make the nice rose-shape.
- 8 stick into oven and bake until pick comes out clean.

- 2 i remember making this in a weird little rectangular pan, which i'm sure we greased. i would estimate this to fit in an 8 or 9 inch square pan, adjust time accordingly, as the 8 inch will make a litte thicker cake. bake until a toothpick comes out clean--no longer--so it will stay moist.

- 1 mix oats and buttermilk together in a bowl and let stand for 5 minutes. combine dry ingredients and add to the oat mixture. add beaten eggs, mixing well.
- 2 spoon onto oiled griddle. brown first side, then flip once only. remove from griddle when golden brown. serves 4.
