Pumpkin Gooey Butter Cakes

Oh So Easy Ice Box Coconut Cake

Total Time: 35 mins Preparation Time: 35 mins

Ingredients

  • 1 (18 1/4 ounce) box duncan hines cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 24 ounces frozen coconut
  • 16 ounces sour cream (not low fat)
  • 1 (12 ounce) container cool whip
  • 2 cups sugar

Recipe

  • 1 mix the cake mix according to directions on box. bake in 2 cake layers and cool; split into 4 layers.
  • 2 mix 2 packages fresh frozen coconut with the sour cream and sugar. set aside 1/2 c of this mixture for later use.
  • 3 spread the rest between layers. now mix the 1/2 c mixture with the whipped topping; spread on top and sides. refrigerate 3-4 days in an airtight container before cutting. leave at least 3 days, 4 is better. very moist.
  • 4 note: for a prettier presentation, toast about 1/2 cup of the coconut and sprinkle over top and/or sides.

Recipe

  • 1 combine flour, salt & baking powder into a pouring bowl and mix.
  • 2 whisk milk, egg & vanilla extract in separate bowl.
  • 3 slowly pour mix into dry ingredients and whisk together until blended. small lumps are ok.
  • 4 add optional fruit/spice. tastes good without also.
  • 5 pour batter onto medium heat skillet and flip once the top of the batter bubbles.

  • 1 cup milk
  • 5 tablespoons butter
  • 1 cup flour
  • 2 eggs
  • 4 teaspoons baking powder

Recipe

  • 1 warm the milk and butter until the butter is melted.
  • 2 let cool a bit or it will cook the eggs when you add them.
  • 3 in a separate bowl, whisk the eggs until well-beaten.
  • 4 add the cooled milk and butter and stir.
  • 5 sprinkle the dry ingredients around on top of the wet ingredients, and stir them together. you don't want a big clump of baking powder or salt anywhere so just sprinkle them around instead of pouring them inches.
  • 6 if you want blueberry pancakes, sprinkle fresh or frozen blueberries on top before you turn them over.

  • 1 3/4 cups all-purpose flour

Recipe

  • 1 heat griddle to medium high (400 degrees).
  • 2 in a large bowl, beat eggs. stir in buttermilk and oil.
  • 3 add remaining ingredients and stir just until large lumps disappear.
  • 4 for thicker pancakes, thicken with additional flour.
  • 5 for thinner pancakes, thin with additional milk.
  • 6 lightly grease heated griddle.
  • 7 a few drops of water sprinkled on griddle sizzle and bounce when heat is just right.
  • 8 pour batter, about 1/4 cup at a time, onto hot griddle.
  • 9 bake until bubbles form and edges start to dry. turn and bake other side.

Mimi's Tropical Christmas Cake

Ingredients

  • 1 cup sugar
  • 1/2 lb butter, softened (2 sticks)
  • 5 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon extract
  • 1 lb glace cherries, mixed red and green, chopped
  • 1 lb glace pineapple, chopped
  • 4 cups pecans or 4 cups brazil nuts, finely chopped

Recipe

  • 1 cream together butter and sugar, adding sugar 1/3 cup at a time. blend on high speed until smooth.
  • 2 add eggs to butter mixture one at a time, mixing together well after each addition.
  • 3 add flour, 1/2 cup at a time, mixing well on low speed until blended.
  • 4 add extracts, mixing well on low speed.
  • 5 add nuts and fruit 1 cup at a time, and hand stir to blend. batter will become very thick as these last ingredients are added. be sure to blend together well by hand (this is the most time consuming part for me).
  • 6 line a fluted (bundt) pan with wax paper, covering all surfaces that will hold batter. fold batter into pan and spread evenly.
  • 7 bake in a pre-heated 250 degree oven for approximately 3 1/2 hours. cake should be golden brown on top.
  • 8 remove cake from oven. cool pan until it is cool to the touch.
  • 9 once cool to touch, invert pan on plate and shake cake loose. it should pop right out.
  • 10 invert cake right side up and cool completely.
  • 11 this cake is very heavy and very rich. i sliver goes a long way.

  • 2 tablespoons packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice

  • 1/2 cup canned pumpkin or 1/2 cup fresh pumpkin
  • 2 tablespoons vegetable oil
  • 2 eggs

  • 2 large potatoes, peeled and grated
  • salt and black pepper, freshly ground
  • 40 g butter, 25g melted
  • 1 garlic clove, crushed
  • 1 egg
  • 1 sprig thyme
  • 1 onion, chopped
  • 200 g parma ham, finely sliced
  • 200 g emmenthaler cheese, finely sliced

Recipe

  • 1 1. thoroughly squeeze out the moisture from the grated potatoes.
  • 2 2. season the grated potato generously with salt and freshly ground pepper. mix in the melted butter, garlic and egg.
  • 3 3. heat a medium frying pan until hot. add the potato mixture, shaping it into a pancake shape.
  • 4 4. fry until set, around 10 minutes, flip over and fry for a further 10 minutes until golden brown on both sides.

  • 2/3 cup fortified baby food oatmeal (you can play with amounts you use)
  • 1 cup all-purpose flour or 1 cup whole wheat flour

  • 1/8-2 cup coconut milk
  • 1 ripe banana
  • 1 cup steamed carrot
  • 1 tablespoon blackstrap molasses

Recipe

  • 1 place cooled carrots, bananas, milk, eggs, oil, and molasses in food processor and blend until carrots are finely cut up and mixture is foamy.

  • 2 tablespoons frozen orange concentrate

  • 3/4 cup plain yogurt

  • 1 for the cupcakes:.
  • 2 preheat your oven to 350 degrees fahrenheit. mix together the flour, salt, baking soda and powder and set aside.
  • 3 in a medium sized bowl, cream the butter until smooth then add the sugar and cream together. once the butter and sugar are creamed add in the orange juice concentrate. mix in one egg at a time.
  • 4 add in flour mixture 1/3 at a time. when flour is thoroughly mixed, mix in the yogurt. batter will be slightly lumpy, but should be smooth kind of like pancake batter.
  • 5 divide the batter evenly into lined cupcake tins and bake for about 15-20 minutes. allow to cool.
  • 6 for the syrup:.
  • 7 bring the champagne and powdered sugar to a boil and let them reduce about half way. don't expect it to get thick. it will still be very liquidy when you are done. poke holes in the cupcakes and drizzle in the syrup. let it absorb into the cupcake and add more. keep adding to taste.

  • 2 teaspoons pure vanilla extract

  • 1 use 9x13 pan mix butter, graham crackers, and sugar and make your pie crust. once done put crust into oven at 325°f for 10 minutes to harden up.

  • 5 lightly grease a griddle.
  • 6 heat griddle and drop about 1/4 cup batter onto griddle.

  • 8 when bubbles begin to appear around outside edge and break, turn with a spatula and cook on other side.

  • 2 for the pancakes, combine the flour, salt, sugar, baking powder and cinnamon in a bowl and work with a fork to remover any lumps. beat the egg whites with the milk and slowly incorporate the flour mix. make sure you achieve a smooth batter.
  • 3 heat some butter in a frying pan (10 cm diameter) and ladle in some batter - depending on how thick you like your pancakes. (for this recipe and the yield of 10 pancakes, i made them to american-style thickness). sprinkle some pear over.
  • 4 leave to cook over medium heat until little crates appear all over the pancake - a sign that the baking powder is making the batter rise and the bottom should be cooked enough for you to flip the pancake over.
  • 5 carefully turn the pancake and cook on the other side until golden brown.
