Mormors Danish Crepes

Ingredients

- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoons icing sugar
- 2 eggs
- 1 cup milk
- 1/2 teaspoon vanilla
- 1 tablespoon lemon juice
- 2 tablespoons icing sugar
Recipe
- 1 sift all dry ingredients together and make a well in the centre.
- 2 in a separate bowl, beat the eggs and add the remaining liquid ingredients.
- 3 pour the beaten liquid into the flour mixture.
- 4 don't over mix and ignore the small lumps.
- 5 wipe a hot griddle lightly with oil.
- 6 spoon batter onto hot griddle, and let it spread until thin.
- 7 when browned on bottom flip onto other side.
- 8 fill with fresh fruit, and roll into tubes.
- 9 sprinkle with fresh lemon juice, and coat with sieved icing sugar.
