Pancakes (quick And Easy)

Ingredients
- 2 tablespoons of melted butter or 2 tablespoons margarine
- 1 1/4 cups milk
- 1 egg
- 1 1/4 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Recipe
- 1 in small batter bowl, melt butter in microwave on high for 30 seconds or until melted. add milk and eggs; whisk until blended.
- 2 in classic batter bowl, combine flour, sugar, baking powder and salt. add milk mixture; whisk just until dry ingredients are moistened (batter will be slightly lumpy).
- 3 heat double burner griddle over medium heat for 5 minuets or until hot. lightly spray with vegetable oil. pour about 1/4 cup of batter onto griddle; immediately sprinkle your mix-in if you want. cook pancakes 2-3 minutes on each side or until golden brown, turn only once (it is the secret to perfectly cooked pancakes). serve immediately.
