Pancakes

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 2 eggs
  • 2 cups buttermilk
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1/2 cup cake flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt

Recipe

  • 1 seperate the egg yolks and whites.
  • 2 mix the dry ingredients together.
  • 3 whisk the wet ingredients together.
  • 4 add the wet ingredients to the dry ingredients and whisk until the batter is fairly smooth.
  • 5 whip the egg whites until they form stiff peaks and gently fold them into the batter, stopping when they are just incorporated.
  • 6 pour 1/3 cup batter into a a lightly oiled skillet and cook over medium heat.
