Ingredients
- Servings: 3
- 2 eggs
- 2 cups buttermilk
- 1/4 cup vegetable oil
- 1 1/2 cups flour
- 1/2 cup cake flour
- 2 tablespoons baking powder
- 1 teaspoon salt
Recipe
- 1 seperate the egg yolks and whites.
- 2 mix the dry ingredients together.
- 3 whisk the wet ingredients together.
- 4 add the wet ingredients to the dry ingredients and whisk until the batter is fairly smooth.
- 5 whip the egg whites until they form stiff peaks and gently fold them into the batter, stopping when they are just incorporated.
- 6 pour 1/3 cup batter into a a lightly oiled skillet and cook over medium heat.
