Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 egg
  • 1 cup all-purpose flour (if using self rising flour, omit baking powder and salt.)
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 beat egg with hand beater until fluffy.
  • 2 beat in remaining ingredients just until smooth.
  • 3 for thinner pancakes, stir in an additional 1/4 c milk.
  • 4 grease heated griddle (to test griddle, sprinkle with a few drops of water. if bubbles skitter around, heat is just right.).
  • 5 pour about 3 tbsp batter from tip of large spoon or from pitcher onto hot griddle.
  • 6 cook pancakes until puffed and dry around edges.
  • 7 turn and cook other side until golden brown.
