Pancakes

Ingredients
- 1 egg
- 1 cup all-purpose flour (if using self rising flour, omit baking powder and salt.)
- 3/4 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
Recipe
- 1 beat egg with hand beater until fluffy.
- 2 beat in remaining ingredients just until smooth.
- 3 for thinner pancakes, stir in an additional 1/4 c milk.
- 4 grease heated griddle (to test griddle, sprinkle with a few drops of water. if bubbles skitter around, heat is just right.).
- 5 pour about 3 tbsp batter from tip of large spoon or from pitcher onto hot griddle.
- 6 cook pancakes until puffed and dry around edges.
- 7 turn and cook other side until golden brown.
