Pancakes For Baby

Ingredients
- 2/3 cup fortified baby food oatmeal (you can play with amounts you use)
- 1 cup all-purpose flour or 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1/8-2 cup coconut milk
- 1 ripe banana
- 1 cup steamed carrot
- 1 tablespoon blackstrap molasses
- 1 tablespoon olive oil
- 1/4 teaspoon cinnamon
Recipe
- 1 place cooled carrots, bananas, milk, eggs, oil, and molasses in food processor and blend until carrots are finely cut up and mixture is foamy.
- 2 in a large mixing bowl, stir together flours, salt, cinnamon and baking powder.
- 3 stir wet mixture into flour, mixing until just barely combined. add milk if needed to make batter fairly thin.
- 4 ladle ~ 2 t amounts onto electric griddle or pan and cook approx 4 min on each side.
