St. James Coffee Cake

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup butter or 3/4 cup margarine
  • 2 cups buttermilk
  • 1 teaspoon baking soda
  • 1 cup raisins or 1 cup currants
  • 1 cup nuts, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a medium bowl, combine the flour, sugar and spices.
  • 3 cut or rub in the butter until the mixture resembles corn meal.
  • 4 reserve 1/2 cup of the mixture.
  • 5 in a second bowl, combine the buttermilk and baking soda.
  • 6 pour this into the remaining crumb mixture in halves, beating thoroughly after each addition.
  • 7 stir in the raisins and nuts.
  • 8 spread the batter into a greased and floured 9x13 pan.
  • 9 sprinkle the reserved crumb mixture over the top.
  • 10 bake at 350 degrees for 1 hour until brown and springy when touched or until a toothpick inserted into the cake comes out clean.
