- 2 cups milk
- 1 1/2 cups quick oats
- 1 cup flour
- 2 1/2 teaspoons baking powder

- 1 pour the milk over the oats and let stand 5 minutes.
- 2 stir the flour, baking powder, sugar and salt together.
- 3 add the beaten eggs to the oat and milk mixture. add the melted butter.
- 4 mix the dry ingredients into the wet ingredients just until moistened.
- 5 you may keep this in the refrigerator for several days or make immediately.
- 6 fry on griddle until brown. these are thick and take a little longer to cook than regular pancakes.

- 3 tablespoons fresh key lime juice (i used bottled key lime)
- 4 cups confectioners' sugar
- lime zest

- 1 combine cake mix, gelatin mix, oil, eggs and orange juice.
- 2 pour into three 8 inch cake pans.
- 3 bake according to instructions on box.
- 4 allow to cool, then poke holes in cakes while in pans and pour key lime juice over layers.
- 5 to make the frosting: in a large bowl, beat the butter and cream cheese until light and fluffy. add lime juice and confectioners sugar. add lime zest if desired. mix well and ice cakes.
- 6 you can substitute ingredients for a lighter cake and it still turns out well.
