whole-grain pancakes

Ingredients

  • Servings: 4
  • 3/4 cup buttermilk
  • 1/2 cup whole wheat flour
  • 1/2 cup quick-cooking oats
  • 1/4 cup amaranth
  • 1 egg
  • 2 tablespoons flax seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vegetable oil, or as needed

  • combine buttermilk, flour, oats, amaranth, egg, flax seeds, chia seeds, olive oil, brown sugar, baking powder, vanilla extract, baking soda, and salt in a food processor or blender; blend until smooth.
  • heat vegetable oil on a griddle or skillet over high heat. pour batter, about 1/4 cup per pancake, the griddle and cook until form and the edges are dry, 3 to 4 minutes. flip and cook until browned on the other side, 2 to 3 minutes. repeat with remaining batter.
