Rhubarb Muffins

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups rhubarb, diced
  • 1/2 cup orange juice
  • 1 orange, zest of
  • 1 small banana
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 cup oatmeal
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 2 tablespoons vegetable oil

Recipe

  • 1 preheat oven to 350f and line your muffin pan with cupcake papers or grease very well.
  • 2 mix wet and dry ingredients separately, then combine.
  • 3 bake muffins for half an hour, or until they test done.
