Royal Icing (the Gerhard Jenne Way)

Ingredients

• 3 egg whites
• 1/2 lemon, juice only
• 750 -850 g icing sugar, sifted

Recipe

• 1 beat the egg whites a little then add the lemon.
• 2 carefully add the icing sugar and mix until even smooth consistency.
• 3 add food colours to portions of icing as directed.
• 4 proceed to ice cake or cookies.
