Mini Muffin Yogurt Cakes

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 36
  • 4 tablespoons unsalted butter
  • 1/2 cup sugar
  • 2 tablespoons lemon zest
  • 1 egg
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 cup low-fat yogurt
  • 1/4 cup lemon juice

Recipe

  • 1 mix room temperature butter with sugar. add lemon zest and egg. in another bowl mix flour and baking powder, sift into wet mixture. pour in yogurt and lemon juice.
  • 2 spray mini muffin pan lightly, over greasing/spraying will damage cakes. fill a little more then half way with batter. bake at 350f for 10-15 minutes. light brown on edges.
