Mini Muffin Yogurt Cakes

Ingredients

- 4 tablespoons unsalted butter
- 1/2 cup sugar
- 2 tablespoons lemon zest
- 1 egg
- 3/4 cup flour
- 1 teaspoon baking powder
- 1/4 cup low-fat yogurt
- 1/4 cup lemon juice
Recipe
- 1 mix room temperature butter with sugar. add lemon zest and egg. in another bowl mix flour and baking powder, sift into wet mixture. pour in yogurt and lemon juice.
- 2 spray mini muffin pan lightly, over greasing/spraying will damage cakes. fill a little more then half way with batter. bake at 350f for 10-15 minutes. light brown on edges.
