Sausage Breakfast Casserole

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb jimmy dean sausage
  • 1/2 cup chopped onion
  • 1/2 cup green pepper
  • 4 cups frozen hash browns
  • 9 -12 eggs, depending on size
  • 1 1/2 cups cheddar cheese, shredded

Recipe

  • 1 brown the sausage and drain.
  • 2 in a greased 9x13 inch cake pan, sprinkle the hashbrowns, then sausage, onion, green peppers, and 1/2 cheese.
  • 3 mix the eggs until scrambled and pour over the hashbrown mixture in cake pan.
  • 4 fork the ingredients together.
  • 5 bake at 350* for 30 minutes, checking to see if done in the center.
  • 6 sprinkle the remaining cheese over the top and put back in the oven until melted.
  • 7 this can be done the night before and put in the refrigerator overnight.
  • 8 you may need to cook a little longer, though.
  • 9 you can be creative, substitute ham for the sauasage.
  • 10 or pepper jack cheese for the cheddar.
