Mel's Buckwheat Pancakes

Total Time: 24 hrs 5 mins Preparation Time: 24 hrs Cook Time: 5 mins

Ingredients

  • 1 3/4 ounces dry yeast (dissolved in 1/2 c. warm water (110 -115 )
  • 2 cups cold water
  • 2 cups flour (unbleached, preferred)
  • 1 cup buckwheat flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon molasses (i use mild flavored)
  • 1/4 cup butter, melted
  • 1 teaspoon baking soda (dissolved in 1/2 c. hot water)

Recipe

  • 1 the night before:.
  • 2 sift together the flours and salt.
  • 3 stir in the dissolved yeast and cold water.
  • 4 beat vigorously until smooth.
  • 5 cover and refrigerate overnight.
  • 6 in the morning:.
  • 7 dissolve the soda in the hot water and add along with the molasses and melted butter.
  • 8 let stand at room temperature for 30 minutes.
  • 9 ladle onto a hot griddle and cook as you would any other pancakes.
  • 10 enjoy!
