Mel's Buckwheat Pancakes

Ingredients
- 1 3/4 ounces dry yeast (dissolved in 1/2 c. warm water (110 -115 )
- 2 cups cold water
- 2 cups flour (unbleached, preferred)
- 1 cup buckwheat flour
- 1 1/2 teaspoons salt
- 1 tablespoon molasses (i use mild flavored)
- 1/4 cup butter, melted
- 1 teaspoon baking soda (dissolved in 1/2 c. hot water)
Recipe
- 1 the night before:.
- 2 sift together the flours and salt.
- 3 stir in the dissolved yeast and cold water.
- 4 beat vigorously until smooth.
- 5 cover and refrigerate overnight.
- 6 in the morning:.
- 7 dissolve the soda in the hot water and add along with the molasses and melted butter.
- 8 let stand at room temperature for 30 minutes.
- 9 ladle onto a hot griddle and cook as you would any other pancakes.
