Passionfruit Cupcakes

Ingredients
- 30 g butter, softened
- 1/2 cup caster sugar
- 2 eggs
- 1 cup self-raising flour
- 1/4 cup passion fruit pulp
Recipe
- 1 preheat oven to moderate (180c/160c fan-forced).
- 2 line 12-hole standard muffin pan with paper cases.
- 3 beat butter, sugar, eggs and flour in small bowl with electric mixer on low speed until ingredients are just combined.
- 4 increase speed to medium, beat until mixture is changed to a paler colour.
- 5 stir in passionfruit pulp.
- 6 divide mixture among cases, smooth surface.
- 7 bake cakes about 20 minutes.
- 8 turn cakes onto wire rack to cool.
