Passionfruit Cupcakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 30 g butter, softened
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 cup self-raising flour
  • 1/4 cup passion fruit pulp

Recipe

  • 1 preheat oven to moderate (180c/160c fan-forced).
  • 2 line 12-hole standard muffin pan with paper cases.
  • 3 beat butter, sugar, eggs and flour in small bowl with electric mixer on low speed until ingredients are just combined.
  • 4 increase speed to medium, beat until mixture is changed to a paler colour.
  • 5 stir in passionfruit pulp.
  • 6 divide mixture among cases, smooth surface.
  • 7 bake cakes about 20 minutes.
  • 8 turn cakes onto wire rack to cool.
