Orange Sponge Tube Cake

Ingredients
- 6 egg yolks
- 1 tablespoon orange zest
- 1/2 cup orange juice
- 1 cup sugar
- 1/4 teaspoon salt
- 1 1/3 cups flour
- 6 egg whites
- 1 teaspoon cream of tartar
- 1/2 cup sugar
Recipe
- 1 pre-heat the oven to 325º.
- 2 beat the egg yolks until very thick and light-colored.
- 3 add the orange peel and the juice and continue to beat until very thick.
- 4 beat in 1 cup of sugar and the salt.
- 5 gently fold in the flour.
- 6 in a separate bowl, beat the egg whites and cream of tartar until they reach the soft-peak stage.
- 7 gradually add the remaining 1/2 cup of sugar.
- 8 gently fold the egg whites into the egg yolk mixture.
- 9 spoon into ungreased 10-inch tube pan.
- 10 bake 55 minutes, or till done.
- 11 invert pan to cool.
