Orange Sponge Tube Cake

Total Time: 1 hr 25 mins Preparation Time: 30 mins Cook Time: 55 mins

Ingredients

  • 6 egg yolks
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 1/3 cups flour
  • 6 egg whites
  • 1 teaspoon cream of tartar
  • 1/2 cup sugar

Recipe

  • 1 pre-heat the oven to 325º.
  • 2 beat the egg yolks until very thick and light-colored.
  • 3 add the orange peel and the juice and continue to beat until very thick.
  • 4 beat in 1 cup of sugar and the salt.
  • 5 gently fold in the flour.
  • 6 in a separate bowl, beat the egg whites and cream of tartar until they reach the soft-peak stage.
  • 7 gradually add the remaining 1/2 cup of sugar.
  • 8 gently fold the egg whites into the egg yolk mixture.
  • 9 spoon into ungreased 10-inch tube pan.
  • 10 bake 55 minutes, or till done.
  • 11 invert pan to cool.
