Party Cake

Ingredients

• 2 1/2 cups sifted cake flour
• 1 teaspoon table salt
• 1 2/3 cups sugar
• 1 1/4 cups milk, divided
• 2/3 cup shortening
• 4 1/2 teaspoons double-acting baking powder
• 4 egg whites
• 1 teaspoon vanilla

Recipe

• 1 preheat oven to 360°f grease 2 deep 9" cake pans with shortening (at least 1 1/2" deep). sift cake flour before measuring.
• 2 beat together cake flour, salt, sugar, 3/4 c milk and shortening for 2 minutes on medium speed.
• 3 add baking powder, egg whites, 1/2 c milk and vanilla. beat another 2 minutes on medium.
• 4 divide batter between prepared cake pans. bake 30 minutes or until a toothpick inserted in center of cake comes out clean.
• 5 cool in pan 10 minutes, then turn out onto cooling rack until fully cooled. fill and frost with your favorite frosting.
