Ricotta Pancakes

Ingredients

  • Servings: 6
  • 1 cup ricotta cheese
  • 2/3 cup milk
  • 3 eggs, separated
  • 4 cups flour
  • 1 teaspoon baking powder

Recipe

  • 1 in a small bowl, separate egg whites and beat until they form a peak.
  • 2 in another bowl, blend the rest of the ingredients.
  • 3 fold in egg whites.
  • 4 cook on a hot, oiled griddle or pan.
  • 5 flip when pancake forms bubbles.
  • 6 roll up like crepes and serve with butter and maple syrup.
