Rock Cakes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3 tablespoons butter
  • 1/2 cup sugar
  • 1 egg
  • 2 cups self raising flour
  • 1/2 cup mixed peel
  • 3/4 cup sultana
  • 1 teaspoon ground ginger
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (or as needed to make a very stiff dough)

Recipe

  • 1 cream butter and sugar, add the egg and beat well.
  • 2 sift in the flour and spices, add the fruit and begin to add as much milk as you need to make a stiff dough.
  • 3 divide with a fork, and place small pieces on a greased biscuit tray.
  • 4 bake in a quick oven for 15 minutes.
  • 5 *ican only guess a quick oven would be 200-220c.
