Orange And Almond Cake (kosher)

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 2 large oranges (steamed or boiled see recipe)
  • 6 eggs (no blood)
  • 250 g caster sugar
  • 250 g almond meal or 250 g ground almonds
  • 1 tablespoon baking powder
  • margarine, for greasing cake pan

Recipe

  • 1 oranges can be boiled for 2 hours and cooled or steamed in a steamer for 50 minutes and cooled. this can be done before time.
  • 2 pre heat oven to 190 or gas mark 5 of 375 degrees.
  • 3 grease high sided cake pan (preferable moveable bottom) can use grease proof paper.
  • 4 break eggs into bowl and beat or blend.
  • 5 add caster sigar to eggs, beat or blend.
  • 6 place oranges in egg and sugar mixture blend well till a smooth mixture with no orange pieces.
  • 7 add almond meal/ground almonds and baking powder.
  • 8 pour batter into cake pan, sprinle caster sugar on top.
  • 9 bake for 1-1 1/2 hours until golden.
  • 10 serve cool. cake can be frozen.
