Scottish Applesauce Cake

Ingredients

- 1/2 cup butter
- 1 1/4 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups all-purpose flour, sifted
- 1 teaspoon salt
- 1/2 teaspoon clove
- 1 cup applesauce
- 2/3 cup butterscotch chips, melted
- 3/4 cup pecans, chopped
- 1/2 cup flaked coconut
- 1/3 cup butterscotch chips
- 1/3 cup brown sugar, firmly packed
- 1/4 cup cream
- 2 tablespoons butter
Recipe
- 1 cake: cream butter and sugar.
- 2 add eggs, vanilla, salt, and cloves; beat well.
- 3 stir in applesauce.
- 4 gradually add flour, mixing well.
- 5 stir in butterscotch.
- 6 pour into greased and floured 8 x 12 x 2-inch pan.
- 7 bake at 350° for 30 to 35 minutes.
- 8 add topping.
- 9 topping: boil all ingredients together until butter and morsels melt.
- 10 when cake is done, leave in pan; spread topping on cake.
- 11 broil 1 minute or so until golden brown.
