Scottish Applesauce Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1/2 cup butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon salt
  • 1/2 teaspoon clove
  • 1 cup applesauce
  • 2/3 cup butterscotch chips, melted
  • 3/4 cup pecans, chopped
  • 1/2 cup flaked coconut
  • 1/3 cup butterscotch chips
  • 1/3 cup brown sugar, firmly packed
  • 1/4 cup cream
  • 2 tablespoons butter

Recipe

  • 1 cake: cream butter and sugar.
  • 2 add eggs, vanilla, salt, and cloves; beat well.
  • 3 stir in applesauce.
  • 4 gradually add flour, mixing well.
  • 5 stir in butterscotch.
  • 6 pour into greased and floured 8 x 12 x 2-inch pan.
  • 7 bake at 350° for 30 to 35 minutes.
  • 8 add topping.
  • 9 topping: boil all ingredients together until butter and morsels melt.
  • 10 when cake is done, leave in pan; spread topping on cake.
  • 11 broil 1 minute or so until golden brown.
