Mississippi Mud Cake

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 2 cups sugar
  • 1/3 cup cocoa
  • 1 1/2 cups butter, softened
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/3 cups flaked coconut
  • 1 1/2 cups pecans, chopped
  • 1 (7 ounce) jar marshmallow creme
  • 1 lb confectioners' sugar
  • 1/3 cup cocoa
  • 1/2 cup butter, softened
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 350f and grease/flour a 13 x 9 cake pan.
  • 2 in a mixing bowl, cream sugar, cocoa, and butter, until light and fluffy.
  • 3 add eggs, one at a time.
  • 4 add vanilla extract.
  • 5 mix well.
  • 6 stir in flour, coconut, and pecans.
  • 7 pour into prepared pan.
  • 8 bake 40 minutes.
  • 9 when done, spread marshmallow creme over top.
  • 10 cool before frosting.
  • 11 make frosting: sift together confectioners' sugar and cocoa.
  • 12 set aside.
  • 13 cream butter in a mixing bowl.
  • 14 add sugar-cocoa mixture.
  • 15 fold in evaporated milk and vanilla extract.
