Mississippi Mud Cake

Ingredients

- 2 cups sugar
- 1/3 cup cocoa
- 1 1/2 cups butter, softened
- 4 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 1/3 cups flaked coconut
- 1 1/2 cups pecans, chopped
- 1 (7 ounce) jar marshmallow creme
- 1 lb confectioners' sugar
- 1/3 cup cocoa
- 1/2 cup butter, softened
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 350f and grease/flour a 13 x 9 cake pan.
- 2 in a mixing bowl, cream sugar, cocoa, and butter, until light and fluffy.
- 3 add eggs, one at a time.
- 4 add vanilla extract.
- 5 mix well.
- 6 stir in flour, coconut, and pecans.
- 7 pour into prepared pan.
- 8 bake 40 minutes.
- 9 when done, spread marshmallow creme over top.
- 10 cool before frosting.
- 11 make frosting: sift together confectioners' sugar and cocoa.
- 12 set aside.
- 13 cream butter in a mixing bowl.
- 14 add sugar-cocoa mixture.
- 15 fold in evaporated milk and vanilla extract.
