Potato And Parsley Pancake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 large potatoes, coarsely grated and water squeezed out
  • 6 tablespoons parsley or 6 tablespoons fresh coriander leaves
  • 1 teaspoon cornflour
  • salt and pepper
  • olive oil, as required to knead the pancake dough
  • oil, to brush the pan

Recipe

  • 1 mix all the ingredients in a bowl.
  • 2 heat a pan on medium flame.
  • 3 brush with a little oil.
  • 4 drop a portion of the potato mixture on the pan.
  • 5 press with a spatula and cook until lightly browned on the underside.
  • 6 brush the top with a little oil.
  • 7 turn over the pancake to cook the other side.
  • 8 when cooked, remove from flame and serve hot.
