Potato And Parsley Pancake

Ingredients
- Servings: 2
- 2 large potatoes, coarsely grated and water squeezed out
- 6 tablespoons parsley or 6 tablespoons fresh coriander leaves
- 1 teaspoon cornflour
- salt and pepper
- olive oil, as required to knead the pancake dough
- oil, to brush the pan
Recipe
- 1 mix all the ingredients in a bowl.
- 2 heat a pan on medium flame.
- 3 brush with a little oil.
- 4 drop a portion of the potato mixture on the pan.
- 5 press with a spatula and cook until lightly browned on the underside.
- 6 brush the top with a little oil.
- 7 turn over the pancake to cook the other side.
- 8 when cooked, remove from flame and serve hot.
