Simplest Cake In The World!

Total Time: 2 hrs 40 mins Preparation Time: 10 mins Cook Time: 2 hrs 30 mins

Ingredients

• 1 kg mixed dried fruit, use some prunes and figs for extra richness
• 2 cups self raising flour
• 2 cups orange juice concentrate (i substitute 1 cup of juice with rum or try baileys irish cream)
• 1 tablespoon cocoa powder
• 2 teaspoons mixed spice (or 2 teaspoons cinnamon and â½ teaspoon ground cloves)

Recipe

• 1 line a high cake tin with baking paper.
• 2 mix the ingredients together, pour into tin and bake at 200 c for 20 minutes, 175c for 20 minutes and 140 c until cooked- just over an hour in fan forced ovens.
• 3 the whole cooking time is about 2- 2 ½ hours in total.
