Oatmeal Coconut Creme Brulee

Ingredients

- 3 large egg yolks
- 6 tablespoons packed brown sugar, divided
- 3/4 cup heavy cream, whipped
- 3 1/2 cups water
- 2 cups old fashioned oats
- 1/4 teaspoon salt
- 2/3 cup milk
- 1 tablespoon butter
- 2 tablespoons toasted shredded coconut
- 1/2 cup fresh raspberry
Recipe
- 1 beat the yolks and 3 tablespoons sugar in a heatproof bowl until pale and thick.
- 2 place over saucepan of boiling water. whisk until pale and very thick, about 5 minutes.
- 3 let cool; cover and refrigerate.
- 4 fold in the cream, then set aside.
- 5 preheat broiler.
- 6 combine the water, oats and salt in medium saucepan, bring to boil.
- 7 reduce heat to medium and cook, stirring occasionally, until thick, 5 minutes.
- 8 stir in the milk and butter.
- 9 spoon the oatmeal into 6 oven-proof shallow bowls or gratin dishes.
- 10 top each with scant 1/4 cup of cream mixture.
- 11 broil 3 inches from heat source 1-2 minutes, until golden.
- 12 sprinkle remaining 3 tablespoons of brown sugar, coconut and berries.
