Oatmeal Coconut Creme Brulee

Total Time: 1 hr 30 mins Preparation Time: 1 hr Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 large egg yolks
  • 6 tablespoons packed brown sugar, divided
  • 3/4 cup heavy cream, whipped
  • 3 1/2 cups water
  • 2 cups old fashioned oats
  • 1/4 teaspoon salt
  • 2/3 cup milk
  • 1 tablespoon butter
  • 2 tablespoons toasted shredded coconut
  • 1/2 cup fresh raspberry

Recipe

  • 1 beat the yolks and 3 tablespoons sugar in a heatproof bowl until pale and thick.
  • 2 place over saucepan of boiling water. whisk until pale and very thick, about 5 minutes.
  • 3 let cool; cover and refrigerate.
  • 4 fold in the cream, then set aside.
  • 5 preheat broiler.
  • 6 combine the water, oats and salt in medium saucepan, bring to boil.
  • 7 reduce heat to medium and cook, stirring occasionally, until thick, 5 minutes.
  • 8 stir in the milk and butter.
  • 9 spoon the oatmeal into 6 oven-proof shallow bowls or gratin dishes.
  • 10 top each with scant 1/4 cup of cream mixture.
  • 11 broil 3 inches from heat source 1-2 minutes, until golden.
  • 12 sprinkle remaining 3 tablespoons of brown sugar, coconut and berries.
