Pineapple Cheesecake

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 2 tablespoons margarine
  • 2 tablespoons sugar
  • 1 1/4 cups graham cracker crumbs
  • 1 dash cinnamon
  • 2 (85 g) packages pineapple jell-o
  • 1 cup boiling water
  • 1 (12 ounce) can crushed pineapple
  • 1 (14 ounce) can evaporated milk
  • 1 (8 ounce) package cream cheese
  • 1 cup sugar

Recipe

  • 1 base:.
  • 2 in a medium size bowl add the graham crumbs, sugar and cinnamon.
  • 3 melt margarine. add to crumb mixture.
  • 4 spread into a 9 x 13 pan.
  • 5 note: you can reserve a teaspoon of crumb mixture to sprinkle on top of the filling once it is in the pan.
  • 6 filling:.
  • 7 dissolve the two packages of pineapple jello with one cup of boiling water. set aside to cool.
  • 8 beat can of evaporated milk to whipped cream consistency.
  • 9 soften the cream cheese and add one cup sugar, cooled jello mixture and pineapple.
  • 10 pour over the graham crumbs. sprinkle the teaspoon of crumb across the top.
  • 11 chill.
