Pineapple Cheesecake

Ingredients

- 2 tablespoons margarine
- 2 tablespoons sugar
- 1 1/4 cups graham cracker crumbs
- 1 dash cinnamon
- 2 (85 g) packages pineapple jell-o
- 1 cup boiling water
- 1 (12 ounce) can crushed pineapple
- 1 (14 ounce) can evaporated milk
- 1 (8 ounce) package cream cheese
- 1 cup sugar
Recipe
- 1 base:.
- 2 in a medium size bowl add the graham crumbs, sugar and cinnamon.
- 3 melt margarine. add to crumb mixture.
- 4 spread into a 9 x 13 pan.
- 5 note: you can reserve a teaspoon of crumb mixture to sprinkle on top of the filling once it is in the pan.
- 6 filling:.
- 7 dissolve the two packages of pineapple jello with one cup of boiling water. set aside to cool.
- 8 beat can of evaporated milk to whipped cream consistency.
- 9 soften the cream cheese and add one cup sugar, cooled jello mixture and pineapple.
- 10 pour over the graham crumbs. sprinkle the teaspoon of crumb across the top.
- 11 chill.
