Pineapple Filling For Cakes (low Fat)

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1/3 cup pineapple juice (use the juice from the canned pineapple)
  • 1 egg yolk, slightly beaten
  • 1 tablespoon fresh lemon juice
  • 1/2 cup crushed pineapple, drained

Recipe

  • 1 in a saucepan, combine sugar, flour, pineapple juice and egg yolk; cook over low heat until thickened (stirring frequently).
  • 2 remove from heat, and stir in lemon juice and crushed pineapple; mix to combine.
  • 3 allow to cool before filling cake.
  • 4 delicious!.
