Pineapple Filling For Cakes (low Fat)

Ingredients
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 1/3 cup pineapple juice (use the juice from the canned pineapple)
- 1 egg yolk, slightly beaten
- 1 tablespoon fresh lemon juice
- 1/2 cup crushed pineapple, drained
Recipe
- 1 in a saucepan, combine sugar, flour, pineapple juice and egg yolk; cook over low heat until thickened (stirring frequently).
- 2 remove from heat, and stir in lemon juice and crushed pineapple; mix to combine.
- 3 allow to cool before filling cake.
