Rhubarb Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 cup buttermilk or 1 cup sour milk
  • 1 1/2-2 cups rhubarb, cut into small pieces
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Recipe

  • 1 mix brown sugar, butter, egg and vanilla.
  • 2 add baking soda, salt, flour and buttermilk.
  • 3 mix until fluffy.
  • 4 add rhubarb.
  • 5 place batter in a 9x13 inch glass pan.
  • 6 mix sugar and cinnamon together and sprinkle on top.
  • 7 bake at 350 degrees fahrenheit for 40 minutes.
