Sticky Toffee Pudding

Ingredients
- 8 ounces dried chopped dates
- 1 1/3 cups water, hot
- 1 1/3 teaspoons baking soda
- 1/3 cup unsalted butter
- 1 cup superfine sugar
- 3 medium eggs
- 1 3/4 cups flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- 4 cups packed brown sugar
- 2 cups butter
- 2 teaspoons vanilla
- 1 cup heavy cream

- 2 preheat oven to 350 degrees, and prepare a 9x13 inch pan.
- 3 combine the dates and hot water in a medium saucepan, bring to boil and remove. add the baking soda and set aside to cool.
- 4 cream butter and sugar completely (for about 3 min.), and add one egg at a time, beating after each addition.
- 5 sift together flour, baking powder and salt, and add to the mixture.
- 6 add the dates and liquid (slowly so that you do not scramble the eggs), and add the vanilla.
- 7 stir just enough to incorporate all ingredients and pour into the prepared pan.
- 8 bake for 25-30 minutes or until a cake tester comes out clean.

- 10 heat sugar, butter and vanilla over low heat for 20 minutes, stirring occasionally until all brown sugar has dissolved.
- 11 if desired, stir in cream.
- 12 keep warm until serving. spoon carmael sauce over each slice of cake and if desired, add a dollop of whipped cream.
