Sukkot Apple Cake

Ingredients

• Servings: 12
• 3 eggs
• 1 3/4 cups sugar
• 1 cup oil
• 2 cups flour
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 1/2 teaspoon salt
• 5 -6 apples, peeled, cored and cut into small chunks
• optional- 1/2 cup chopped nuts

Recipe

• 1 beat eggs well.
• 2 gradually add sugar and oil.
• 3 add dry ingredients and mix well.
• 4 fold in apples (and nuts if using).
• 5 bake in greased 9x13 or bundt pan, at 350 degrees for about 1 hour, or until tester comes out clean.
• 6 cool in pan before slicing or unmolding.
