Oatmeal Cake

Ingredients

- 1 1/4 cups boiling water
- 1 cup quick oats
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 cup butter, softened (margarine, shortening may be substituted)
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
Recipe
- 1 preheat oven to 350 degrees f.
- 2 grease and flour 9 x 13 inch baking pan.
- 3 in a medium bowl, pour boiling water over quick oats and stir. let sit to cool.
- 4 in another medium bowl, mix together flour, salt, baking soda and cinnamon. set aside.
- 5 in a large bowl, cream together sugars and butter.
- 6 add vanilla, and eggs, one at a time.
- 7 stir in oat mixture and dry ingredients until blended.
- 8 pour batter into the prepared baking pan.
- 9 bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean.
- 10 place pan on wire rack to cool. after 15 minutes, remove from pan and continue cooling on rack.
- 11 cool at least 10 or 15 minutes more if serving warm.
- 12 cool at least an hour or until cake is cool to the touch before icing or frosting cake.
- 13 cover and refrigerate leftover cake.
