Oatmeal Cake

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 24
  • 1 1/4 cups boiling water
  • 1 cup quick oats
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup butter, softened (margarine, shortening may be substituted)
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 grease and flour 9 x 13 inch baking pan.
  • 3 in a medium bowl, pour boiling water over quick oats and stir. let sit to cool.
  • 4 in another medium bowl, mix together flour, salt, baking soda and cinnamon. set aside.
  • 5 in a large bowl, cream together sugars and butter.
  • 6 add vanilla, and eggs, one at a time.
  • 7 stir in oat mixture and dry ingredients until blended.
  • 8 pour batter into the prepared baking pan.
  • 9 bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean.
  • 10 place pan on wire rack to cool. after 15 minutes, remove from pan and continue cooling on rack.
  • 11 cool at least 10 or 15 minutes more if serving warm.
  • 12 cool at least an hour or until cake is cool to the touch before icing or frosting cake.
  • 13 cover and refrigerate leftover cake.
