Pineapple Filled Donuts

Ingredients

- vegetable oil
- 1 (20 ounce) can pineapple slices, drained
- 1 cup pancake mix
- 3/4 cup water
- 1 teaspoon vanilla
- powdered sugar
Recipe
- 1 heat oil to 375.
- 2 lay pineapple slices on platter lined with paper towels to soak up any excess juice.
- 3 in a shallow bowl, whisk together pancake mix, water and vanilla. batter will be slightly lumpy.
- 4 coat pineapple slices in batter.
- 5 fry in hot oil 1-2 minutes per side until golden brown.
- 6 place donuts on another plate covered with paper towels to drain. sprinkle with powdered sugar.
